During the summer of 2003 the barrels were kept in the deepest
and coolest part of the cellar. Only after the hard work of the grape
harvest and with the calmness deserved did we start to test the wines
to assess the "coupages" or mixtures on different days
and with the assistance of outstanding "sommeliers" both
national and international the final combination of the different
varieties, a treasured secret closely kept by the wine-cellar as
the choice was complicated.
The wines were mixed in February of 2004 and the mixtures were
stored for two months in large barrels so that there would be maximum
cohesion between the different varieties. At the beginning of May
they were lightened with natural eggwhite.
Such extraordinary results of the finished product and the approach
of the great event which represented the Royal Wedding of the Prince
and Princess, encouraged us to crown this magnificent wine by bottling
it on the very same day.
